
This morning’s breakfast was special so I’ll share how I prepared it.
Leave two bunches of spinach in the the refrigerator for..a long time.
Pick out all the nasty bits of spoiled spinach, leaving slightly less than one bunch.
Heat olive oil in an iron skillet.
Add chopped garlic and chopped onion to hot olive oil instantly burning both.
Add chopped spinach to ecological disaster currently unfolding in the skillet. Sauté until reduced to around 1/2 cup of spinach.
Add two eggs because,…breakfast.
Add some salt and pepper to counteract the blandness of my soul.
I now have something resembling unhappy spinach hash.
